From our trip to Paris last fall!

You guys! You guys! YOU GUYS!!!!! Is that the tiniest little chill drop-in-the-extreme-humidity in the air?!?!?! After a record hot summer, I can’t remember a time I was so ready for fall to get here. For real – #famouslyhot Columbia, South Carolina broke records this year with more days over 90 degrees (and most days WAY over 90) than in recorded history. Bleh. As I may have mentioned before, I am definitely a foodie. So much of a foodie that I will spend hours in the kitchen just to come up with something more exciting for lunch than a sandwich (I kind of hate sandwiches, in fact). Confession: I once followed an entire recipe I found online JUST to find out what a crumpet actually was (spoiler: it’s a pan-fried English Muffin). So I thought I’d celebrate my obsession with love of cooking by sharing a few of my favorite recipes I’ve made lately.

Jalapeño Margaritas

I love making fresh juice cocktails! They are much tastier than cocktails made from a mix, plus it can just be fun to whip something up from scratch! These margaritas take a bit of work (considerably less if you have an electric citrus juicer), but I think it’s worth it for the fresh juice, and no weird ingredients or chemicals (not to mention the added sugar) of a margarita mix.

Shrimp Summer Rolls

Summer rolls are so easy to make, and you can fill them with anything you like! They are a great way to consume lots of fresh veggies. If you want to make them a meal (they are great for lunch on a hot day), add some protein. These have shrimp, but you can add chicken, tofu, beef – anything you like! And if you don’t like any of these veggies, feel free to swap them out with something you like better – or just leave it out. Another variation is to add some fruit like fresh mango or strawberries.

War Mouth and Soft Shell Crab Season

If you didn’t already know, it is currently Soft Shell Crab Season in South Carolina. From what I understand, this is about a month-long time each year when a certain type of crab sheds its outer layer, and the entire crustacean can be eaten – shell and all. It is delicious, and it won’t be around much longer. But for now, many of the restaurants around Columbia are featuring their own take on this delightful little delicacy. Continue reading
